Assistant Cheese Maker
Traders Point Creamery, Indiana's first Certified Organic Dairy Farm, has an immediate opening to join our production staff.
Traders Point Creamery produces award-winning cheeses, milk and ice cream from organic, 100% grass-fed, non-homogenized milk. We started bottling and selling milk direct to customers in the central Indiana region in the summer of 2003. We now produce several artisan dairy products made in small batches, using traditional methods. Our production practices are designed with health and sustainability as the goals, and with minimally invasive processes we retain as much of the milk’s natural flavor, character, and health benefits as possible.
The production position at Traders Point Creamery is multi-faceted, but it's essentially to make the products we sell onsite in our farm store and restaurant. This position is primarily, but not limited to, the production and bottling and/or packaging of whole milk, chocolate milk, eggnog, ice creams, and fresh soft cheeses such as fromage blanc, or fromage frais.
As a production employee, you are responsible for the set up and sanitization of various vats and bottling equipment, the post-production disassembly and cleaning, and always ensuring cleanliness by following proper sanitization procedures. You will also act as the main connection between the production department, the farm store, and the restaurant; ensuring that we do not run out of items and notifying staff of what is available. Communication between staff is the key to making sure things run efficiently.
You will also assist the Head Cheesemaker as needed in the production of our aged cheeses and maintain the cheese in the aging cave. These tasks are multi-disciplinary, involving stick readings on the bulk milk tank, obtaining raw milk samples, running Delvo tests, recording pasteurization and CIP charts, rinsing and sanitizing the bulk tank and milk lines using the PLC system, and ensuring that all equipment is clean and in good working order. You are also responsible for collecting and washing the returned milk bottles from the other departments using a sink and bottle washer equipment.
The production employee is also responsible for maintaining and ordering inventory of dry goods. These include items such as sugar, cocoa, vanilla, milk powder, herbs/spices, and all product packaging materials. Above all, this is a position that requires the ability to work independently, to prioritize tasks for efficiency, to have attention to detail and be equipt with some technical skills. When all this is done well, it is very rewarding to see the products you have made be enjoyed by our guests.
Skills Required: Food service/production experience is a must
